Because of its size and scope this is by far the most comprehensive work on Portuguese cooking now available in English. The recipes are definitely authentic, covering all regions of continental Portugal. There are also recipes from Madeira and the Azores but relatively few, even though they have influenced food on the mainland. The author has focused on authentic home cooking rather than more fancy restaurant recipes so you will get a very good sense of traditional Portuguese home cooking. There is perhaps a bit too much emphasis on very traditional dishes from rural areas where this is still a lot of subsistence farming. In other words, there are many recipes using blood and offal that are fascinating to read but not very likely to be prepared in the homes of many current readers! Still, they are very interesting. Portugal is one of the oldest countries in Europe and has preserved a lot of food ways from the Middle Ages that have disappeared in other parts of Europe. One such dish that has survived intact in Portugal is an original version of blancmange, made with chicken breast meat as one of the principal ingredients, just as it was centuries ago. It's easy to make to try a medieval dessert at home! The entire section on desserts is wonderful, with many recipes for the amazing old convent sweets consisting mainly of egg yolks, sugar, and almonds. It's amazing how the Portuguese nuns turned such a limited repertoire of ingredients into such a vast, varied range of desserts and confections! I am very happy with this book because I really like Portuguese food. If you require something in English that's a bit less comprehensive than this hefty tome I can strongly recommend Jean Anderson's book on Portuguese cooking, which is also excellent.
